# Bubble Tea, Boba & Juice Bar Checklists

Seven operational Bubble Tea, Boba & Juice Bar checklists for boba shops, juice bars and smoothie counters - 66 checks covering goods-in, opening, tapioca pearl cook-and-hold, fresh produce and blender hygiene, the sugar/ice/seal service line, and closing with waste and keeping food cold (cold chain). Every check carries a **why** tied to sales, stock or waste, and every statistic behind them is traceable to a named public source: FDA national risk-factor inspections, NYC DOHMH records for 543 juice-format establishments, a Hong Kong government sugar study of 127 tea drinks, Turkish ice-machine sampling, Thai bubble tea microbiology and the Champions 12.3 restaurant waste economics. Where no published number exists - and for the 4-hour pearl window, sugar-level accuracy, sealer hygiene and topping shrink, none does - we say so plainly and the checklist generates the number for you.

[**Goods-In & Receiving** Fruit, milk and alt-milks, tea leaf, pearls, syrups and toppings. Accept only stock that will sell in time - and date it before it leaves the door. · 7 checks](/checklists/bubble-tea-juice-bar-receiving-checklist/)[**Opening - Brew, Cook & Set Up to Sell** Make the equipment safe, cook and label the first batches, then set the counter up to sell. Nothing gets built on a machine you have not cleaned today. · 15 checks](/checklists/bubble-tea-shop-opening-checklist/)[**Tapioca Pearls, Jellies & Toppings** Cook to a window you can prove, rotate the topping rail, and weigh what you throw away. No published study sets the pearl window - your log does. · 9 checks](/checklists/tapioca-pearl-cook-and-hold-checklist/)[**Fresh Produce, Juicing & Blending** Wash it, cut it to demand, hold it cold - then treat the blender and juicer as the contamination path they are. · 8 checks](/checklists/juice-bar-produce-and-blender-checklist/)[**Service Line - Sugar, Ice, Seal & Speed** The drink is built in front of the customer in under four minutes. Read the ticket back, measure the syrup, keep the ice clean, check the seal. · 9 checks](/checklists/bubble-tea-sugar-ice-and-seal-checklist/)[**Closing, Waste & Cold Chain** Log the temperatures, strip the machines, weigh the waste, reorder for tomorrow. Nothing wet gets sealed shut overnight. · 12 checks](/checklists/bubble-tea-shop-closing-checklist/)

## The five rules that protect profit

**1\. Batch to demand, not to pot size** Pearls, jellies, brewed tea and cut fruit are cooked or cut for the next 2–3 hours of trade - never for the comfort of a full pot.

**2\. No label, no life** Every cooked batch, opened syrup and cut-fruit tub carries a time and a discard time. An unlabelled container has no window, so it gets sold all day.

**3\. Never run dry on the top three** A sold-out signature drink or topping is a lost sale and a customer who tries the shop next door. Reorder at your stock target (par), before the cut-off.

**4\. Sugar level is a promise** Measure syrup, never free-pour. The level the customer chose is the level they get - that is the whole reason they chose you.

**5\. Log it or repeat it** Discard weights, ticket times and running-out-of-stock events (stockouts) captured daily are what stop the same loss tomorrow.
