# Burger Joint Weekly Checklist

A Burger Joint line runs too hot and too fast for the deep jobs, so they get a weekly slot instead. These 3 checks are that layer. Do a full pest inspection once a week, checking bait stations, entry points, drains and storage rather than a quick glance. Run a full calibration on every probe thermometer, testing the boiling point as well as the daily ice check and writing down each result. Then take the grill plates and fryer vats apart and deep-clean and sanitize every part, including the joints, vents and the space behind the equipment.

### Pest, Calibration & Deep Clean

**1\. Do a full pest inspection once a week. Check bait stations, entry points, drains, and storage areas, not just a quick glance.** A full check finds hiding spots and early signs that a quick daily glance can miss.

**2\. Do a full calibration check on every probe thermometer once a week, not just the daily ice check. Test the boiling point too and write down each result.** A probe can read right at freezing but wrong at cooking temperature. Both ends need testing.

**3\. Take the grill plates and fryer vats apart once a week. Deep-clean and sanitise every part, including joints, vents, and behind the equipment.** Daily wipe-downs miss grease that builds up in hidden spots over time.

**What is on the Burger Joint weekly checklist?**

**How is the weekly probe calibration different from the daily check?**

The daily check is a quick ice-water test. The weekly calibration also tests the boiling point and records each result, which catches a probe drifting at cooking temperatures where a burger's safety is actually decided.

**Why deep-clean the grill and fryer weekly?**

Grease and carbon build up in the joints, vents and behind the equipment where nightly cleaning never reaches. A weekly strip-down removes that build-up, which is both a fire risk and a pest attractant.
