# Chocolatier & Chocolate Shop Checklists

## The five rules that protect profit

**1\. Steady beats cold** Hold one stable ambient band and log it. Cycling - warm afternoon, cool night, in and out of a fridge - is what blooms chocolate, not one warm hour.

**2\. Bloomed or melted never goes back on display** Grey haze and lost gloss are damage you already paid for. Follow the steps in order - re-melt it for baking, discount it, or write it off - and never put it back out at full price.

**3\. Dark is not dairy-free** No free-from, vegan or 'nut-free' claim leaves your counter unless a current spec sheet proves it. Advisory wording is not a control.

**4\. Declared weight is a promise** Every hand-packed box, pick-and-mix bag and gift assortment gets weighed against the quantity printed on it. Short measure gets you fined; over-filling means giving away profit.

**5\. Log it or repeat it** Ambient temperature, humidity, bloom write-offs and how much seasonal stock sells, logged daily, are what stop the same loss - and the same missed peak - next season.
