# Sandwich Shop & Deli Slicer Cleaning & Cross-Contact Checklist

A Sandwich Shop & Deli slicer needs a **full break-down clean and sanitise at least every 4 hours of use**, a damage inspection on the same clock, and an extra clean on every allergen or species change. These 8 checks cover the whole cross-contact picture - only 49.5% of managers in a 298-deli CDC study reported cleaning slicers every 4 hours, 3 in 5 delis ran damaged slicers, and 1 in 4 had sanitiser mixed to the wrong strength. The 4-hour interval is the US FDA Food Code baseline (4-602.11); outside the US use your own authority's interval. ### The four-hour rule

**1\. Take apart, clean and sanitise every slicer at least every 4 hours of use** Only about half of delis manage to do this. A single outbreak traced back to the blade can cost more than a year of counter profit.

**2\. Clean and sanitise between allergen changes and between types of meat, not just on the schedule** Cheese, then turkey, then ham on the same blade is how an allergen, or raw meat touching ready-to-eat food, gets passed on between scheduled cleans.

**3\. Check the blade, blade guard, ring guard, gauge plate and carriage for damage every 4 hours** 3 in 5 delis use damaged slicers, and only 1 in 4 check them for damage. Food hides from cleaning exactly where the damage is.

### Sanitiser that actually sanitises

**4\. Test how strong your sanitiser is with strips at set-up and every time you refill the bucket** 1 in 4 delis uses sanitiser at the wrong strength. A bucket that's too weak makes every wipe-down pointless.

**5\. Clean and sanitise boards, tongs, scoops, spreaders and slicer trays on the same 4-hour schedule** Dirty equipment is the problem in nearly two-thirds of delis inspected. It is never only the slicer.

**6\. Deep-clean the areas that don't touch food: the slicer base, drip tray, drains, and the floor under the line** Most deli samples that test positive for listeria come from surfaces that don't touch food - floors, drains and squeegees. Bacteria living there can spread to the blade.

### Hands and workflow

**7\. No bare-hand contact with ready-to-eat fillings. Change gloves when you switch tasks and after handling any raw food** Over half of food-worker norovirus outbreaks involve bare hands touching ready-to-eat food. The sandwich is the last thing touched before it is eaten.

**8\. Check for sick staff at the start of each shift. Nobody with vomiting or diarrhoea should work on the build line** Infected food workers cause most foodborne norovirus outbreaks where the source is known.

## Frequently asked questions

**How often should a deli slicer be cleaned?**

A full break-down clean and sanitise at least every 4 hours of use, plus a clean between allergen changes and between species. The 4-hour figure is the US FDA Food Code baseline (4-602.11); outside the US use your own authority's interval. In CDC's study of 298 retail delis, only 49.5% of managers reported meeting the 4-hour frequency and worker-reported data put it lower at 45.8%. FDA's deli-department study found 62.5% of departments out of compliance for contaminated equipment and 47.9% out of compliance on 'food contact surfaces are properly cleaned and sanitized'.

**Why is the slicer the highest-risk piece of equipment in a deli?**

Because that is where listeria risk builds up the most. An FDA and USDA (FSIS) study estimated 166.9 deaths a year from listeria illness caused by deli meat sliced at the store, compared with 34.1 deaths from prepackaged meat - about 83% of deli-meat listeria deaths were linked to meat sliced at the store, and nearly 70% of predicted deaths were in retail-sliced product with nothing added to slow bacteria growth. Environmental sampling also found 9.5% of samples taken in 30 delis during operation were positive for L. monocytogenes, with 12 of those 30 delis finding the same strain of bacteria again and again, month after month.

**What else needs cleaning on the same 4-hour clock?**

Boards, tongs, scoops, spreaders and slicer trays, plus a verified sanitiser bucket - 1 in 4 delis was found running sanitiser at the wrong strength, which means the wipe-down doesn't really clean anything. The non-food-contact zone matters too: most listeria-positive deli samples came off floors, drains and squeegees rather than food-contact surfaces, so the slicer base, drip tray and the floor under the line belong on the same schedule.
