# Frozen Yogurt Shop Soft-Serve Machine Cleaning Checklist

This 9-check routine covers a full Frozen Yogurt Shop soft-serve machine clean end to end. It covers hitting the manufacturer's teardown interval, cleaning every non-automatic part on the 4-hour clock, mixing sanitiser to label strength and holding contact time, inspecting seals at reassembly, and weight-checking overrun before the first sale. It exists because **fortnightly, not daily, is the most common reported cleaning interval - 30 of 98 surveyed soft serve and frozen yoghurt businesses (31%), against 19 cleaning daily**. 16% of the soft serve samples in the same survey failed the bacteria count test (plate count). ### Hit the cleaning schedule every time

**1\. Follow the maker's written teardown schedule. Write down the date and your initials each time.** Reported cleaning schedules for soft-serve machines vary widely, from daily to every two weeks. No study checks whether operators actually follow their own written procedure (SOP). A dated, initialed log is the only proof that you hit your schedule.

**2\. Clean and sanitize every part you handle by hand - spouts, nozzles, draw handles, drip trays - every 4 hours (US FDA Food Code baseline; outside the US, follow your own local health authority's schedule)** Heat treatment cleans the sealed barrel, but not the parts your hands and the customer's cup touch. Under the US FDA Food Code (4-602.11), these parts stay on a 4-hour cleaning schedule no matter what the barrel's cycle is. Outside the US, follow the schedule your local health authority requires.

**3\. During teardown, remove and brush-clean the O-rings, seals, scraper blades, and beater shaft, one at a time** Residue builds up in the seals and blades. A barrel that is only rinsed, not taken apart, is how a machine that looks clean still fails a germ count test.

### Sanitize properly, not just so it looks clean

**4\. Mix sanitizer to the strength shown on the label, and check it with a test strip before use** Half of operators who use sanitizer use it the wrong way. A solution that is too weak gives you a false sense that the machine is clean.

**5\. Wash, then rinse, then sanitize, in that order. Leave the sanitizer on for the time shown on the label.** Sanitizer on a dirty surface does nothing. Sanitizer wiped off too soon does nothing either. The order and the wait time are what make it work.

**6\. Check the O-rings, seals, and gaskets when you put the machine back together. Replace anything cracked, flattened, or discolored.** A worn seal lets mix leak into places you cannot clean, and it takes the barrel out of spec. A cheap part can cause an expensive shutdown.

### Prove the result - consistency, overrun, and product

**7\. Restart the machine, refill it, and confirm the hopper reaches and holds the right temperature before the first sale** If a barrel will not cool down after cleaning, that is a full day of lost sales - unless you catch it at reassembly instead of at the first customer.

**8\. Check overrun after every clean: weigh a set amount of mix going in, then weigh the same amount of finished product coming out** Putting the machine back together changes how much air it mixes in. Catch it here, and you protect texture and yield with one 60-second check. Frozen yogurt has no federal minimum weight rule - 21 CFR 135.110's 4.5 lb/gal rule only applies to ice cream and frozen custard, so it only affects you if you also make those.

**9\. Send a product sample for lab testing on your set schedule, and keep the certificate on file** A test result is the only proof that your cleaning schedule actually works, and your only defense when an inspector asks.

## Frequently asked questions

**How often should a soft-serve or frozen yogurt machine be cleaned?**

Follow your machine manufacturer's written procedure and your local health authority. The FDA Food Code baseline is that equipment contacting time/temperature-control-for-safety food is cleaned at least every 4 hours. A machine whose manufacturer process exceeds that interval requires a variance. All non-automatic components must still be cleaned and sanitised every 4 hours regardless. Heat-treatment machines are the exception on the sealed barrel. Taylor states its heat-treat equipment only requires disassembly and cleaning once every fourteen days.

**How many frozen yogurt shops actually clean their machine daily?**

In the NSW Food Authority's soft serve and frozen yoghurt survey, 19 of the 98 responding businesses (about 19%) cleaned the machine daily. 17 cleaned twice weekly, 12 weekly, 6 three times a week and 1 monthly. The largest single group, 30 of 98 (31%), cleaned only fortnightly. A further eleven cleaned daily and disassembled the machine for a thorough clean fortnightly. On product, 18 of the survey's 153 samples (11.8%) failed the bacteria count test (plate count), and every one of them was soft serve. That is 16% of the 111 soft serve samples. The 42 frozen yoghurt samples were all good and were not tested for bacteria count at all, because the test cannot tell starter-culture bacteria apart from other bacteria. These are self-reported cleaning frequencies. That is why the interval needs to be logged, not remembered.

**Is using sanitiser enough to pass a machine clean?**

Not on its own. The NSW Food Authority found that up to 50% of businesses that used sanitiser did not use it appropriately. It also found that 7% relied on hot water alone with no chemical sanitising step. Sanitiser on a soiled surface does nothing, and sanitiser wiped off before its contact time does nothing. Wash, rinse, then sanitise at label strength, verified with a test strip.
