# Frozen Yogurt Shop Topping Bar & Self-Serve Hygiene Checklist

This 8-check routine controls the three things that go wrong on a Frozen Yogurt Shop self-serve topping bar: the utensils, the product in the bins, and allergen cross-contact. ### Control the utensils and the hands

**1\. Swap every scoop, tongs, and ladle for a clean one on a timed schedule. Write down each swap.** Utensils are the one thing every customer touches, and no one person is responsible for them. A timed swap schedule is the only method that works on a busy Saturday.

**2\. Wash your hands between every task that is not serving. Gloves do not replace handwashing.** People wash their hands less often when wearing gloves than without them. A gloved hand that touched a bin lid is still the contamination route.

**3\. Wipe and sanitize bar surfaces, utensil rests, and the sneeze-guard glass at every rotation** Sticky sauce rings and a smeared sneeze guard cost you the sale before they ever cost you an inspection score.

### Protect the product in the bins

**4\. Refill from a fresh container. Never pour new topping on top of old topping.** Topping off a bin hides the oldest product at the bottom forever. Rotate the bin instead, so nothing goes bad out of sight.

**5\. Keep dairy, cut fruit, and other toppings that can spoil chilled at no more than 5°C (41°F). Check and write it down.** The bar is the warmest place in the store. Toppings that can spoil will spoil early if they are not kept cold - and that is waste you already paid for.

**6\. Throw away any bin a customer has touched directly, dropped a used spoon into, or overfilled onto the counter** Losing one bin is cheaper than one incident, and much cheaper than a recall or an outbreak in a dairy product.

### Protect the allergy customer and your profit

**7\. Use separate utensils, and keep nuts and other listed allergens away from other toppings** A shared scoop turns every bin into a nut bin. Keeping allergens separate is the only control that actually works on an open self-serve bar.

**8\. Write down topping waste for each bin at closing, along with the reason** This data stops you from refilling a topping that never sells, and helps you cut the fill level on toppings that never clear out.

## Frequently asked questions

**How often should frozen yogurt topping bar scoops be changed?**

There is no published data on how often to change scoops, or how contamination changes with that timing, for topping bars - we searched and are telling you it is missing. Run it on a timed rotation you log rather than on guessing, and match it to the US FDA Food Code rule of cleaning food-contact equipment at least every 4 hours (check your own local rule outside the US) - that 4-hour figure comes from equipment cleaning rules, not from measurements on utensils. Never leave a handle resting in the product, and swap immediately if a customer touches the utensil end or drops a used spoon into a bin.

**Do gloves make a self-serve topping bar safer?**

Not on their own. In a study that watched 321 food workers, correct handwashing was lower when gloves were worn (16%) than when they were not (30%), against an overall rate of 27% correct handwashing across about 8.6 tasks per hour that called for it. A gloved hand that touched a bin lid is still the contamination route - the fix is handwashing between non-serving tasks, with gloves changed at the same time.

**What temperature should perishable frozen yogurt toppings be held at?**

Hold dairy, cut fruit and other perishable toppings chilled at 5°C (41°F) or below and log it, matching the hopper rule used across this pack. The topping bar is usually the warmest point in the store. Bin discards, chilled-topping readings and waste-by-reason logs are how you find out which toppings you are actually paying to throw away.
