# Ghost Kitchen & Dark Kitchen Goods-In, Packaging & Seal Stock Checklist

A Ghost Kitchen & Dark Kitchen runs **two supply chains - food and packaging**. Running out of either stops orders leaving the building. So goods-in has to cover both. These 7 checks probe chilled and frozen deliveries at the door. They count what arrived brand by brand. They re-read ingredient specs for allergen changes. And they count tamper seals, labels and insulated bags against a par like any food line. Each is tied to published evidence, including a North Carolina State University study of 72 meal-kit home deliveries in which over 76% of boxes contained at least one item above 4.4°C (40°F).

### Accept only stock you can sell in time

**1\. Check the temperature of chilled and frozen deliveries at the door. Chilled items must read 0–5°C (32–41°F). Reject anything above 8°C (46°F).** Warm stock spoils early. That means waste you already paid for. In the closest study of a cold chain like this, out of 72 home meal-kit deliveries, over 76% of boxes had at least one item above 4.4°C (40°F). So 'it looked fine' is not a real check.

**2\. Count what arrived against the order, brand by brand, before the driver leaves** If a shared ingredient arrives short, it takes items off the menu (86s them) for several virtual brands at once. Catch this now, or pay for it in cancellations tonight.

**3\. Reject stock that is close to its expiry date, below your minimum days-to-expiry** A delivery-only kitchen has no walk-in customers to sell near-date stock to. There is no counter to mark it down on. So it goes in the bin at full cost.

**4\. Read the ingredient spec again on every new or swapped product, to check for allergen changes** When a supplier changes a recipe without telling you, it can break every allergen answer you give, on every brand. One case was built on a single ingredient that turned out to be 100% peanut powder.

### Treat packaging and seals as production stock, not office supplies

**5\. Count tamper-evident seals, labels and label-printer rolls against a set stock level, just like any food item** Running out of seals during a rush means either unsealed orders or stopped orders. 28% of drivers admit to taking food from an order. In some places, an unsealed bag is against the law.

**6\. Test a sample from every new packaging batch for leaks and lid fit before it goes into use** Suppliers change their moulds without telling you. A lid that no longer clicks shut can lead to a spilled bag, a refund, and many one-star reviews.

**7\. Check your stock of insulated bags and hot trays. Inspect liners for damage or dirt.** Once a bag is sealed, packaging is the only thing keeping the food hot. In one packaging study, tray material alone changed cooling time by 50 minutes.

## Frequently asked questions

**What temperature should chilled deliveries arrive at in a ghost kitchen?**

At or below 5°C (41°F), probed at the door, with anything above 8°C (46°F) rejected rather than risked. The reason to actually probe rather than eyeball is that failure to keep food cold during delivery is common. Across 72 deliveries from 12 leading meal-kit and food-delivery companies, more than 76% of boxes contained at least one item exceeding the 40°F (4.4°C) safety threshold. 50% of the companies shipped meat or poultry above that line. Coolant choice made the biggest difference in the outcome. 93% of gel-pack shipments had at least one item above 40°F, versus 17% of dry-ice shipments.

**Should tamper-evident seals be treated as stock in a ghost kitchen?**

Yes. Count them against a par level exactly like a food line. Running out mid-peak leaves you choosing between unsealed orders and stopped orders. A 2019 US Foods survey found 28% of delivery drivers acknowledged taking food from an order. 85% of consumers said they wanted restaurants to use tamper-resistant labels on packaging. California law effective 2021 requires tamper-evident packaging for third-party restaurant deliveries. So in some jurisdictions an empty seal box is a legal failure rather than a service one.

**Why does a short delivery matter more in a multi-brand kitchen?**

Because one shared ingredient arriving short takes items off the menu (86s them) across several virtual brands at once. Every one of those items is still live on the apps until someone updates them. Out-of-stock items are a main driver of restaurant-initiated cancellations. These averaged 2.97% of all orders in a full-year analysis of online restaurant orders. They ranged 2.28%–3.88% week to week, and rose to 5.25% in the hour before closing. Counting brand by brand while the driver is still on site is what turns a supply problem into a credit rather than a night of cancellations.
