# Ice Cream & Gelato Parlor Freezer Chain & Dipping Cabinet Temperature Checklist

Eight checks plus a three-times-daily temperature log built around the tradeoff every Ice Cream & Gelato Parlor lives with: **−18°C (0°F) or colder** preserves the product, but nobody can scoop it at that temperature, so the cabinet runs warmer and starts a clock. This checklist separates the two jobs - storage freezer versus dipping cabinet versus gelato vitrine, each logged in its own temperature range - and tells you exactly what to do when one drifts. The published evidence is unusually clear here: a 2025 Clemson study measured ice crystal size and grittiness at four storage temperatures, and a UK study found frozen cabinets spending up to **45%** of the time above −12°C (10°F).

### Measure the chain, don't assume it

**1\. Log the holding-freezer temperature three times a day. It must read −18°C (0°F) or colder.** This number protects every tub you own. The storage freezer is the only place that truly keeps the texture safe.

**2\. Log every dipping cabinet and gelato display case separately. Take one reading per cabinet, not one for the whole shop.** Cabinets fail one at a time. A shop-wide average can hide one case that is slowly ruining your best-seller.

**3\. Use a min/max or data-logging thermometer. Don't rely on the door dial.** A single reading misses temperature swings between checks. The excursion you never saw is the one that ruined the texture.

### Act when it drifts

**4\. If a reading is out of range: shut the lids, move at-risk tubs to the holding freezer, log the time, and call the manager.** What you do in the first ten minutes decides whether this is a minor problem or a full write-off of the case.

**5\. Keep lids, covers, and night covers closed whenever no one is serving from that case.** An open case runs warmer and costs more to run. Closing it protects both the texture and your electricity bill.

**6\. Check door seals, frost build-up, and defrost cycles every week. Log any problems and book the repair.** Frost and worn seals let a cabinet slowly run warm for weeks before anyone notices the gritty texture.

### Protect the texture you sell

**7\. Every week, taste and check the oldest tub in each cabinet for ice crystals, grittiness, and shrinkage.** Ice crystal growth is the first damage a warm cabinet causes, and you've already paid for it. Catch it in one tub before it spreads across the whole case.

**8\. Set a limit on days in the cabinet. Rotate out any tub that has passed that limit.** Warmer storage only lasts so long. A tub that has sat too long will scoop gritty, even if it never melted.

## Frequently asked questions

**What temperature should ice cream be stored and served at?**

Store at −18°C (0°F) or colder and run dipping cabinets warmer only because hardness comes down to how much of the water in the mix has turned to ice. About 80% of the water in a standard ice cream mix is frozen at −18°C, while hardness soft enough to scoop needs no more than 65–70% of mix water frozen, and a worked gelato example reaches about 65% frozen water at −11°C (12°F). That is why gelato and hard ice cream cannot share one cabinet setpoint - they sit at different points on the same scale. In practice: serve ice cream from a dipping cabinet no warmer than −15°C (5°F) and cap that tub at four weeks, because the Clemson storage study cited on this page found −15.0°C works only if the product is consumed within four weeks and −12.2°C (10°F) caused significant quality loss over 12 weeks. Gelato reaches hardness soft enough to scoop at a warmer temperature, about −11°C (12°F) in the worked example, so a gelato vitrine has to turn over in days rather than weeks.

**How long can ice cream sit in a dipping cabinet before quality drops?**

Warm holding has a clock on it. A 12-week Clemson University storage study concluded that −15.0°C (5°F) remains workable only 'if consumed within four weeks', while −12.2°C (10°F) caused significant quality loss, with average ice crystal size reaching 84.1 µm against 47.7 µm at −28.9°C (−20°F) and grittiness scores rising from 2.6 to 3.94 on a 1–5 scale from a trained tasting panel. Set a maximum days-in-cabinet limit and rotate tubs out when they hit it, even if they never melted.

**How often should ice cream freezer temperatures be checked?**

Three times a day - opening, mid-shift and closing - with one reading per cabinet rather than one for the shop, and a min/max or data-logging thermometer rather than the door dial. Spot readings miss the swings between checks, and those swings are the problem: UK monitoring found some frozen products spending up to 45% of their time above −12°C (10°F). Ice cream retail cabinets have also been reported swinging from −23°C to +10°C (−9°F to 50°F) against a −18°C target.
