# Ice Cream & Gelato Parlor Checklists

Seven Ice Cream & Gelato Parlor checklists for scoop shops and soft-serve counters - 60 checks covering the freezer chain, dipping-well hygiene, allergen scoop rules, portioning and seasonal stock levels (par levels). Every check carries a **why** tied to sales, stock or waste, and every number behind them comes from a named public source: FDA, UKHSA, FSAI, USDA NASS, EPA WaterSense and a 2025 Clemson storage study. Where no published number exists - scoop-shop waste rates, how many dipping cabinets follow the rules, scoop allergen transfer - we say so instead of making one up.

## The five rules that protect profit

**1\. −18°C (0°F) or colder, always** Holding freezers hold at −18°C (0°F) or below. Display cabinets run warmer only so the product is soft enough to scoop, and only for as long as the product can handle it.

**2\. Melted once means written off** Softened or melted-and-refrozen product never goes back into service. Refreezing hides the damage from you, not from the customer.

**3\. Never empty a top flavour** An empty pan of your number-one flavour is a lost sale and a lost regular. Back it up in the freezer and refill before it bottoms out.

**4\. Clean scoop, every allergy order** Fresh washed scoop, fresh tub surface, and read the allergen chart out loud. The scoop is how contamination spreads (cross-contact route) in this kind of shop.

**5\. Log it or repeat it** Temperatures, dumps and sell-outs captured daily are what stop the same loss - and the same temperature problem (excursion) - happening again tomorrow.
