# Bubble Tea, Boba & Juice Bar Fresh Produce, Juicing & Blending Checklist

A Bubble Tea, Boba & Juice Bar juice checklist has two halves: **the fruit and the machine**. These 8 checks cover washing produce under running water before every cut, holding cut fruit at 4°C (39°F) or below, and stripping down juicer screens, blender jugs and gaskets on a posted interval rather than at close - because food-contact surfaces fail sanitation in 40.94% of fast-food-format inspections and 'food-contact surface not properly washed, rinsed and sanitized after each use' was cited 421 times across juice-format establishments in NYC inspection records. It is achievable: 100 untreated fresh and squeezed juices in one European study met every regulatory limit.

### Wash and rotate the fruit

**1\. Wash all whole produce under running water before cutting or juicing - every item, every time** Running water removed 2.13–2.62 log of pathogens from tomatoes, and 1.49–1.69 log from lettuce, in IAFP testing. Skipping the rinse removes nothing at all.

**2\. Do not expect a store-bought produce wash to do more than plain water** Store-bought vegetable wash was the least effective treatment tested, with most reductions under 2 log - pay for the habit of rinsing, not for the bottle.

**3\. Cut fruit to the next 2–3 hours of demand and hold it at 4°C (39°F) or below** Fresh-cut fruit at a steady 4°C (39°F) had no Listeria growth over 8 days; at 8°C (46°F) it grew 1.37 log - and a fridge that drifts warm after day one still gave 1.23 log.

**4\. Rotate the fruit bin daily - oldest forward, bruised out - and log what you dumped** Fruit shrink is the biggest waste you can fix in a juice bar, and only the log tells you which item to buy less of next week.

### The machine is the contamination path

**5\. Take apart and sanitize juicer screens, augers, blender jugs and gaskets on the posted schedule, not just at close** Food-contact surfaces fail 40.94% of US FDA fast-food inspections, and 'food-contact surface not properly washed, rinsed and sanitized after each use' was cited 421 times across juice-format shops in NYC inspection records.

**6\. Rinse the blender jug between builds, and fully sanitize it between dairy, non-dairy and allergen changes** The rinse protects the taste of the next drink; the full sanitize protects the customer with the allergy - and both protect the sale.

**7\. Check gaskets, seals and blade housings weekly for film and residue** A blender can be clean where you look and dirty where you do not - the gasket is where build-up survives a rinse.

**8\. Check the first juice of the day for colour, separation and off-smell before it goes on sale** 100 untreated fresh and squeezed juices in one European study met every regulatory limit, with E. coli below detection in all of them - a clean machine is a standard you can reach, not luck.

## Frequently asked questions

**How should a juice bar wash fruit before juicing?**

Under running tap water, every item, every time - and without expecting it to sterilise anything. IAFP testing measured log reductions from running water of 2.13 (Salmonella), 2.62 (E. coli O157:H7) and 2.44 (L. monocytogenes) on tomatoes; 1.58, 1.69 and 1.49 on lettuce; 1.30, 1.09 and 0.55 on cantaloupe; and only 0.63 to 0.67 across all three pathogens on broccoli. Commercial vegetable washes were 'generally the least effective treatment' in that same study, with most reductions under 2 log units, so a bottled wash is not worth a premium over water and good rinsing discipline.

**How often should juice bar blenders and juicers be sanitized?**

Rinse the jug between builds, full-sanitize between dairy, non-dairy and allergen changes, and break down screens, augers, jugs and gaskets on a posted interval instead of waiting for close. This is the segment's most-cited failure: in NYC DOHMH inspection records filtered to juice, smoothie and fruit-salad cuisine - 543 distinct establishments and 5,661 violation rows - the top codes were non-food-contact surface not kept clean (702 citations), backflow and liquid-waste issues (449), and food-contact surface not properly washed, rinsed and sanitized after each use (421). Nationally, 174 of 425 fast food establishments (40.94%) failed the food-contact-surface sanitation check.

**What temperature should cut fruit be held at in a juice bar?**

4°C (39°F) or below, and the margin above that is smaller than most operators assume. In a 2025 study where fresh-cut fruit cocktails had Listeria monocytogenes germs added to them and were held for 8 days, a constant 4°C (39°F) did not support growth (under 0.5 log CFU/g by day 8), a constant 8°C (46°F) produced 1.37 log CFU/g, and a regime that started at 4°C on day one and slipped to 8°C thereafter still produced 1.23 log. In other words, a fridge that drifts after the first day gives away almost the entire benefit of holding cold at all.
