# Bubble Tea, Boba & Juice Bar Tapioca Pearls, Jellies & Toppings Checklist

Most Bubble Tea, Boba & Juice Bar hold cooked tapioca pearls for 4 hours - and **no published study measures microbial growth or texture loss in cooked pearls held at room temperature**, so that number is trade practice, not science. ### Cook and hold to a window you can prove

**1\. Give every cooked batch of pearls, jellies or puddings a batch card: cooked at, discard at** Cooking a batch and forgetting it is how pearls get served hours past their best texture - and date-marking already fails 32.09% of US FDA fast-food inspections without anyone even trying.

**2\. Cook to the next 2–3 hours of demand, not to the size of the pot** 114 restaurants cut food waste 26% by weight in 12 months, with a typical 7:1 payback - cooking to match demand drove most of that.

**3\. Discard at the end of the hold window and weigh what you discarded** The discard weight sets tomorrow's batch size. No published study sets this window, so your own log is the only evidence that exists for your shop.

**4\. Keep syrup-held pearls and toppings covered and out of the splash zone of the service line** 36% of retail bubble teas in one sampled market failed microbiological standards - an open topping tub on a wet counter is the easiest way in.

### Toppings rotate or they cost you

**5\. Write the open date and use-by date on every opened syrup, puree, jelly and popping-boba tub** An undated opened tub is a guess you are serving to a paying customer - and date-marking ready-to-eat food was out of compliance in 129 of 402 US FDA fast-food inspections (32.09%).

**6\. Use the oldest stock first (FIFO) on the topping rail at every changeover - oldest to the front, new tubs behind** The tub at the back is the tub that goes out of date; rotation turns near-date stock into sales instead of waste.

**7\. Pull and log anything past use-by before service starts, not during the rush** A tub pulled mid-rush has already been served from - this check only works if it happens before the first order.

### Protect the topping supply chain

**8\. Ask the supplier for a new certificate of analysis (COA) on pearls, powders and jellies after any change to formula, brand or origin** All four boba products tested by Consumer Reports contained lead - at 83%, 70%, 63% and 29% of the safe limit - so a quiet formula change is a quiet change in risk.

**9\. Log which toppings actually sell, by drink, each week** A topping that does not sell is cash sitting in a fridge going out of date - this log is what you cut from the next order.

**How long can cooked tapioca pearls be held?**

Most operators work to a 4-hour window, and you should set and label one - but be clear that it has no published basis. No study measures microbial growth or texture and taste breakdown in cooked tapioca pearls held at room temperature; the nearest published work covers starch changes (called retrogradation) in chilled tapioca gel beads and Bacillus cereus growth on cooked rice, neither extended to boba. Treat 4 hours as a house default, put a cooked-at and discard-at time on every pot, and weigh what you bin - your discard log is the only evidence that will ever exist for your shop. **How should bubble tea toppings be rotated?**

The payoff for getting rotation and batching right is well quantified: 114 restaurant sites across 12 countries cut food waste 26% by weight in 12 months and 58% over three years, at a median 7:1 benefit-cost ratio.

**Is there lead in tapioca pearls?**

Consumer Reports tested four boba products with three samples each - Gong Cha Pearl Milk Tea, Kung Fu Tea Milk Tea with Boba, Trader Joe's Instant Boba Kit and WuFuYuan Tapioca Pearl Black Sugar - and found detectable lead in all four. As a share of its level of concern for lead in a single serving, the results were 83%, 70%, 63% and 29%: none exceeded the level of concern, but three of four exceeded half of it. Lead in the liquid portions of the restaurant bubble teas was higher than in the pearls themselves, which is why the checklist asks for a supplier certificate of analysis on pearls, powders and jellies, re-requested after any formula or origin change.
